SWISS STEAK 
Round steak
1 lg. can tomatoes, cut up
2-3 stalks celery, chopped
1 med. onion, chopped
1-2 green peppers, chopped
1 regular can tomato juice

Coat steak with flour and tenderize with a meat mallet. In electric skillet, melt shortening, brown steak on both sides. Turn heat to simmer; top with tomatoes and the vegetables. Pour tomato juice into pan. Cover; simmer on low heat about 2 hours. Add more tomato juice as needed.

NOTE: Makes a delicious gravy for mashed potatoes.
