CHICKEN & FRUIT SALAD 
1 (5 lb.) roasting chicken
3/4 c. diced celery
1 c. Mandarin orange sections, drained
1/2 c. cultured sour cream
1 c. green grapes
1/2 c. mayonnaise
2 tbsp. finely minced onion
1 tbsp. lemon juice
1/2 tsp. salt
1/2 tsp. pepper
Cashew nuts

After chicken is cooked and cooled, remove skin. Cut chicken into fairly large bite size pieces. Place in a bowl and add celery, grapes, orange sections. Mix together sour cream, mayonnaise, onion, lemon juice, salt and pepper.

Pour over chicken and fruit and mix well. Cover and chill several hours to let flavors blend.

I add the nuts just before I serve it as I don't want them soggy. May substitute onion salt for minced onion and don't always use pepper. Makes a great graduation salad.
