QUESADILLA DEL MERCADO (Cheese
Crisp Market-Style)
 
1 oz. Monterey Jack cheese, shredded (1/4 c.)
2 corn tortillas
2 thin slices tomato
1 thin onion slice
1/4 c. finely shredded lettuce
Homemade or canned hot salsa
1 slice avocado

Preheat a lightly greased griddle over medium high heat. Sprinkle cheese on a tortilla and top with another tortilla. Cook on each side on hot griddle until tortillas are hot and cheese is melted. Place on a plate. Lift up top tortilla. Place tomato slices, onion, lettuce, salsa and avocado inside. Replace top; serve immediately. Makes 1 serving.
