SUGARED RASPBERRIES 
This is an old method for preserving fruit without cooking. Sugared raspberries will keep for one year if refrigerated. Tastes like summertime in a jar!

2 cups fresh raspberries
2 cups granulated sugar

Carefully wash and pick over berries, discarding leaves or blemished fruit.

Place berries in mixing bowl, and pour sugar over them.

Using a potato masher, mash the sugar into the raspberries until they are liquefied, and no traces of whole berries remain. Do NOT use a blender for this.

Transfer to clean jars, refrigerate for 2 to 3 days before using.
