RICE PUDDING 
1 3/4 c. water
1/2 c. long-grain rice
1/2 tsp. salt
2 c. milk
2 eggs, beaten
1/3 c. sugar
1 tsp. vanilla
1/4 c. raisins, plumped (optional)
Nutmeg (optional)

Heat oven to 350 degrees. Bring water to boil and add rice and salt. Cover and cook until all water is absorbed (about 30 minutes). Add milk and boil gently until thick (approximately 5 minutes). Combine eggs, sugar, and vanilla in bowl. Add rice mixture and mix well.

Pour into greased casserole dish. Prior to putting into casserole, add raisins if desired. Sprinkle nutmeg on top. Bake in 350 degree oven in pan of water, approximately 50 minutes. Test by inserting knife in center. If knife comes out clean, pudding is done.
