SWEET POTATO BALLS 
4 lg. sweet potatoes
2/3 c. firmly packed brown sugar
1 tsp. grated orange rind
4-6 tbsp. orange juice
8 lg. marshmallows
2 c. flaked coconut, toasted

Simmer sweet potatoes 25-30 minutes in pan of water until tender. Let cool to touch; peel, mash, and measure 4 cups potatoes. Stir in brown sugar, orange rind, and orange juice. Mix well. Shape 1/2 cup potato mixture around a marshmallows. Roll in coconut. Place potato balls in a 9x13 inch pan and bake at 350 degrees for 15-20 minutes.
