SQUASH CASSEROLE 
2 c. cooked, mashed yellow squash
1 med. onion, chopped
2 eggs, beaten
Salt and pepper
1/2 c. cornmeal mix (or self-rising meal)
3/4 c. grated cheese
1 stick butter

Into casserole dish, melt butter, pour most of melted butter into the mixture of above ingredients. Place into casserole dish. Bake for 45 minutes to 1 hour at 375 degrees. Double recipe for large casserole.
