PINEAPPLE UP-SIDE DOWN CAKE 
1 1/2 c. sifted flour
1 c. granulated sugar
2 tsp. baking powder
1/2 tsp. salt
1/3 c. Crisco
2/3 c. milk (room temperature)
1 tsp. vanilla flavoring
1 egg (room temperature)

Beat all ingredients, except eggs. Add eggs and beat 2 minutes more.

In heavy pan, melt 1/2 stick butter and add 3/4 cup brown sugar with 1 small can of crushed pineapple. Garnish with sliced pineapple and cherry if you wish. Pour cake mixture over this and bake at 350 degrees for 30 minutes.
