CASHEW SUGAR COOKIES 
1 1/4 c. flour
1/2 c. ground cashews
1/4 c. sugar
1/4 c. packed brown sugar
1/2 c. butter

In mixing bowl combine flour, ground nuts, sugar and brown sugar. Cut in butter until mixture resembles fine crumbs. Form mixture into ball and knead until smooth. On lightly floured surface roll dough to 1/4 inch thickness. Cut into 1 1/2 inch circles.

Place one inch apart on ungreased cookie sheet. Lightly sprinkle with additional sugar. Then lightly press a whole nut in center of each cookie. Bake 8-10 minutes at 375 degrees. Remove and cool on a wire rack. Makes 42.
