HEIDI'S APPLE BARREL PIE 
2 sticks softened butter
2 c. flour
2 tbsp. sugar
4 c. (or more) sliced apples
2/3 c. sugar
2 tsp. cinnamon
1 large box French Vanilla instant pudding
1 container Cool Whip

Mix butter, flour and sugar together. Pat into 9 x 13 pan. Mix together apples with sugar and cinnamon. Pour into pie crust and bake at 350°F for 45 minutes. Prepare French Vanilla instant pudding. While the apples are still hot, pour pudding over apples. Cool and refrigerate overnight before serving. Top with cool whip.
