FRENCH ONION SOUP 
4 lg. yellow onions
2 tbsp. butter
1 tbsp. flour
6 c. simmering beef broth
Salt & Pepper to taste
6 slices French bread (toasted in oven)
3/4 c. Swiss or Gruyere cheese, grated
1/4 c. Parmesan cheese, grated

Peel onions and slice them thinly. Separate slices into rings. Saute onion rings in hot butter in a skillet until softened and lightly stir in flour. Add onions to hot broth. Cover saucepan and simmer for 20 minutes. Taste the soup, add salt and pepper if necessary.
