BULK CHORIZO SAUSAGE FILLING 
1 lg. onion, finely chopped
1 lb. ground beef
1/2 lb. ground pork butt
2 tsp. each: chili powder and crumbled oregano
1/4 tsp. cinnamon
1 tsp. salt
1/2 tsp. liquid hot pepper seasoning (optional)
5 tbsp. vinegar
1 1/2 c. enchilada sauce

Combine the onion, ground beef, ground pork, chili powder, oregano, cumin, cinnamon, salt, hot pepper seasoning and vinegar. To prepare this mixture as a filling lightly brown it in a wide frying pan over medium high heat, breaking meat apart as it cooks. Add enchilada sauce and boil until liquid is gone.
