BLACK BOTTOM CUPCAKES 
1 (8 oz.) pkg. cream cheese, softened
1 unbeaten egg
1/3 c. sugar
Dash of salt
6 oz. pkg. chocolate chips
1/3 c. coconut
1/3 c. nuts (optional)

Mix all ingredients together.

BATTER:

3 c. flour
2 c. sugar
1/2 c. cocoa
2 tsp. baking soda
1 tsp. salt

Mix together and add:

2 c. water
1 egg
2/3 c. oil
2 tbsp. vinegar
2 tsp. vanilla

Fill muffin cups 2/3 full of batter, then put a scant teaspoon of filling into the center of each. Bake for 25 minutes at 350 degrees.
