SPINACH SOUFFLE 
1 pkg. frozen spinach
1 1/2 c. cottage cheese
3 eggs
3 tbsp. flour
4 oz. diced Velveeta
Chopped onion, as much as desired
1/4 c. butter

Cook spinach as directed on package. Melt butter. Mix all ingredients together and bake for 20-30 minutes in a 350 degree oven.
