QUICK SPINACH SOUFFLE 
1 pkg. frozen spinach
1 lb. ricotta cheese
1/2 c. shredded cheddar
Scallions
3 eggs
3 tbsp. flour
2 tbsp. salad oil

Defrost spinach; microwave and squeeze dry. Mix with all other ingredients. Bake at 350 degrees for 45 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
