SPANISH STYLE LIMA BEANS 
1 1/2 c. beans, lima, dry
6 1/2 x. water, cold
1 1/2 tsp. salt
Water, hot
1/2 c. bacon, raw, chopped
1/4 c. onions, finely chopped
1 c. tomatoes, canned
1/8 c. sugar, granulated
1/2 tsp. mustard
Pinch of ground cloves
3/4 tsp. salt
Pinch of pepper

Pick over beans, removing discolored beans and foreign matter. Wash beans thoroughly. Cover with water; add salt. Bring to a boil; boil 2 minutes; turn off heat. Cover; let soak 1 hour. Bring beans to a boil if necessary, add water to cover beans. Simmer 30 minutes. Add bacon, onions, tomatoes, sugar, mustard, flour, cloves, salt, and pepper; simmer 30-45 minutes or until beans are just tender.
