FRIED CABBAGE AND DUMPLINGS 
Cast iron skillet works best.

Grate 1 large cabbage. Melt butter in skillet to 1/4 inch deep. Add cabbage, salt, and pepper (onions, optional). Have salt water boiling for dumpling.

DUMPLINGS:

3 c. flour
1 tsp. salt
1/2 tsp. baking powder (optional)
7 eggs

Mix with fork, then add about a tablespoon of warm water at a time until sticky. Drop 1/2 teaspoon at time into boiling water. Remove drain. Stir and heat through cabbage - and eat!

I have been making fried cabbage and dumplings for years. The recipe is from my grandmother. I cook the shredded cabbage in olive oil with salt and pepper covered until the cabbage is soft. I do not boil my dumplings I fry them. with the cabbage. After the cabbage is soft I mix the flour and egg with a little chicken stock (or water if I do not have stock) and salt and pepper. I roll the dough out, cut into squares, and drop them into the pan with the cabbage. Simmer until the dumplings are cooked through. I lightly season with onion powder and garlic powder. It is delicious!!!!
