MACARONI SALAD | |
1/3 c. peeled, diced cucumber 2 tbsp. white vinegar 4 c. cooked elbow macaroni 1/2 c. chopped green pepper 1/3 c. thinly sliced celery 1/4 c. sliced green onions 1 (2 oz.) jar diced pimento, drained 1/4 c. reduced calorie mayonnaise 1/2 c. plain low-fat yogurt 3/4 tsp. dry mustard 1/2 tsp. salt 1/2 tsp. dried dill weed 1/8 tsp. pepper Combine cucumber and vinegar in a medium bowl; let stand 30 minutes. Add macaroni and next 4 ingredients; toss well. Combine mayonnaise and next 5 ingredients; stir well. Add to macaroni mixture; toss gently to coat. Cover and chill. Yield 12 servings (about 63 calories per 1/2 cup). |
