FREEZING AVOCADOS 
When avocados are in season and are ripe and cheap, buy several, they can be frozen easily.

Mash 3 avocados and add 1 tablespoon lemon juice. Mix and seal in small ziplock bag and freeze flat. Defrost later in microwave and add sour cream and salsa for dips. Thaw quickly (will turn brown if you leave it at room temperature to thaw).

Since microwave ovens vary in power, you may need to adjust your cooking time.
