SWEET POTATO PIE 
4 slightly beaten eggs
30 oz. can sweet potatoes or yams
1 1/2 c. brown sugar
1 tsp. salt
2 tsp. cinnamon
1 tsp. ginger
1/2 tsp. allspice
1/2 tsp. nutmeg
1/2 tsp. cloves
1 tsp. vanilla (or Amaretto/Frangelico)
2 (12 oz.) cans (3 c.) evaporated milk

Pour ingredients into crusts. Cook 15 minutes at 425 degrees. Reduce to 350 degrees for 50 minutes.
