CRUSTLESS QUICHE MUFFINS 
2 tbsp. bacon bits
3/4 c. heavy cream
1 c. shredded cheese
6 eggs
10 oz. frozen broccoli, thawed and squeezed dry
salt and pepper to taste

Heat oven to 350°F. Butter muffin tins. In large bowl, combine eggs, cream, broccoli, salt and pepper. Stir in bacon bits. Pour into muffin tins, filling each approximately halfway.

Bake 1 hour or until knife in center comes out clean.

Makes 12 to 15 muffins.
