PUMPKIN PIE 
1 (4 serving size) env. low calorie butterscotch flavor pudding
1 1/2 c. non-fat milk
1 c. canned pumpkin, without added salt
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1/8 tsp. ginger
1 baked 8-inch pie crust, cooled
Non-Caloric Sweetener to equal 1 tsp. sugar

Place pudding mix in saucepan. Gradually add milk; cook and stir over medium heat until mixture comes to a boil. Remove from heat. Add pumpkin, spices, and sweetener; mix well. Pour into pie crust. Chill until firm, about 3 hours. Garnish with prepared low calorie whipped topping, if desired.

Makes 6 servings.
