CORN - POTATO CUPS 
4 lg. potatoes (preferably white potatoes)
2 c. corn kernels, well cooked
3 lg. ripe tomatoes
1/4 c. diced cucumber
1 tsp. oregano
Salt & pepper
1 tsp. vinegar or mayonnaise

Bake the potatoes, split in half, remove about half of the inside center of potato. Put the removed potato and all other ingredients in a bowl and mix well. Put mixture into potato shell or cup and sprinkle with grated cheese or bacon bits. May be garnished with fresh herbs, if desired.
