COCONUT CAKE 
1 pkg. yellow cake mix
4 eggs
1/2 c. oil
1 c. milk

Mix cake ingredients and pour into three round cake pans that have been sprayed with Pam. Bake 25-30 minutes at 350 degrees. Prepare frosting while cake is baking (see below). While cake is warm, frost between layers using 3/4 of frosting. Assemble cake. To the other 1/4 of frosting add one small container of Cool Whip. Frost tops and sides of cake with remaining frosting. Refrigerate in airtight container for two days.

FROSTING:

1 (7 oz.) pkg. coconut
1 (8 oz.) sour cream
1 3/4 c. sugar

(I double above ingredients for lots of frosting). Also will need:

1 sm. container Cool Whip

Mix frosting ingredients and let stand while cake bakes.
