CHICKEN SALAD WITH NOODLES 
Poach chicken breasts, shred or dice
Water chestnuts, diced
Fresh or frozen peas
Scallions
Salt and pepper
Equal part of honey and grainy mustard (to taste)

Serve over rice noodles (Chinese rice noodles, if possible - cook for minutes and drain). May be served hot or cold.
