MINTED HONEY BANANA BREAD 
2 ripe bananas
1/4 tsp. peppermint extract
3 tbsp. honey
2 tbsp. butter, softened
1/2 c. sugar
2 eggs
1/4 tsp. salt
2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1/2 c. chopped nuts

In large bowl, mash bananas well. Add extract, honey, butter, sugar, and eggs. Beat 2 to 3 minutes. Sift together dry ingredients and fold GENTLY into banana mixture. Pour into a well greased 9 x 5 inch loaf pan. Bake at 350 degrees for 45 minutes. DO NOT OVERBAKE! Cool in pan for 10 minutes, then remove and cool on rack. Freezes well.
