MINTED HONEY BANANA BREAD 
2 ripe bananas
1/4 tsp. peppermint extract
3 tbsp. honey
2 tbsp. butter, softened
1 tsp. baking powder
1/2 c. sugar
2 eggs
1/4 tsp. salt
2 c. flour
1 tsp. baking soda

In a large bowl or food processor, mash bananas well. Add extract, honey, butter, sugar, and eggs. Beat for 2-3 minutes. Mix dry ingredients and fold gently into banana mixture.

Pour into a well-greased 9x5 inch loaf pan. Bake at 350 degrees for 45 minutes. Do not overbake. Cool in pan 10 minutes, then remove and cool on rack. Makes 1 loaf. Freezes well.
