QUICK FIESTA PIE 
1 1/2 lb. ground beef
Chili-O seasoning mix
2 (14 1/2 oz.) cans tomatoes
17 oz. can corn
Jiffy cornbread mix
1 egg
1/2 c. milk

Brown the ground beef and stir in the seasoning mix. Add the tomatoes and corn (don't drain). Bring the meat mixture to a boil. Spoon into a 2-quart casserole dish.

Combine cornbread mix, egg and milk; stir until just moistened. Spoon over meat mixture. Bake at 400 degrees for 20 minutes. Serves 4-6.
