CURRIED MUTTON | |
1 lb. mutton (thigh with bone-in, cubed) 1/4 c. vegetable oil Salt & pepper to taste 1 tbsp. thyme flakes 1 onion, sliced 4 tbsp. curry powder 3 c. hot water In large bowl mix mutton, salt, pepper, thyme flakes and onion. Let sit for 2 hours. Add oil to deep frying pan. Remove mutton from bowl. Scrape off onions and leave in bowl for later. Brown mutton in oil. Drain oil. Add onions from bowl, 3 cups hot water and curry powder to mutton in frying pan. Cook until tender and a thick gravy appears. Serve with rice. |
