CURRY GLAZE CHICKEN 
1 med. onion, chopped
6 bacon sliced, diced
1 tbsp. curry powder
1 tbsp. sugar
1 can condensed beef broth
2 tbsp applesauce
2 tbsp. flaked coconut
2 tbsp. catsup
2 tbsp. lemon juice
8-10 chicken breasts/thighs, skinned
8 tbsp. flour
1 1/2 tsp. salt
1 tsp. ginger
3/4 stick butter, melted

Coat chicken with a mixture of 6 tablespoons flour, salt, and ginger. Roll in butter. Place in pan. Combine 2 tablespoons flour with remaining ingredients; heat to boiling stirring constantly. Simmer for 15 minutes stirring of 10. Bake chicken uncovered at 400 degrees for 20 minutes; baste with half of curry sauce. Bake another 20 minutes; pour remaining curry sauce on chicken. Bake additional 20 minutes. Serve with rice and desired condiments. Yields 8 servings.
