PUMPKIN CAKE WITH CREAM CHEESE
ICING
 
4 eggs
2 c. sugar
1 c. salad oil
2 c. flour
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
2 c. canned pumpkin
1 tsp. vanilla

Mix eggs and sugar in large bowl. Add oil; mix. Combine dry ingredients and add to egg mixture. Add pumpkin and vanilla. Bake for 50 minutes at 350 degrees in a 9x13-inch pan.

CREAM CHEESE ICING:

1 (8 oz.) pkg. cream cheese
1 stick butter
1 box confectioners sugar
2 tsp. vanilla
1 c. pecans (optional)

Soften butter. Add cream cheese. Beat until well blended. Slowly add sugar and vanilla. Sprinkle pecans over iced cake.
