ENCHILADA PIE 
1 1/2 lb. ground beef
1 onion, chopped
1 tbsp. vinegar
1 sm. can chopped olives
2 sm. can tomato sauce
3 tbsp. chili powder
2 tsp. salt
1/2 tsp. pepper
4 c. water
1 dozen corn tortillas
1/2 lb. grated cheese
1/2 c. flour mixed with 2/3 c. water

Assemble in morning and bake in afternoon. Brown 1 1/2 pounds ground beef with onion. Add vinegar, olives, tomato sauce, seasonings, and water. Simmer 20 minutes. Thicken with flour and water mixture. Layer tortillas, meat mixture and cheese, end with cheese. Bake at 350 degrees for 25 minutes.
