JAMBALAYA 
2 tbsp. shortening
1 lb. ground beef
1/2 c. onion, chopped
1/3 c. green pepper, chopped
1 clove garlic, finely minced
2 tsp. salt
1/8 tsp. black pepper
1/4 tsp. thyme
1 can cream of tomato soup, diluted with 1 can water
2/3 c. uncooked rice

Heat shortening in 8-inch skillet with cover. Add ground beef, and cook until red color disappears. Add all remaining ingredients at one time. Stir thoroughly. Cover skillet. When mixture starts teaming, turn heat to simmer setting and cook for 35 minutes. Stir well before serving. Serves 4-6. Cooking time--about 40 minutes.
