JAMBALAYA 
2 tbsp. butter
1/2 c. chopped green onions
1 tsp. garlic powder
1 lb. boneless, skinless cooked chicken, cut in pieces
1 c. cut okra (or frozen okra)
1 yellow pepper, cored, seeded and cut into 1 inch pieces (hot or mild)
1/4 lb. diced smoked ham
3 c. tomato sauce
1 tsp. cajun flavor instant bouillon
Cooked rice

Melt butter, add onion and garlic powder. Cook and stir 3 minutes. Add all ingredients except tomato sauce. Cook and stir 7 minutes. Add tomato sauce. Bring to a boil, reduce heat and cover. Simmer 15 minutes, stirring occasionally.
