JAMBALAYA 
2 tbsp. salad oil
1 lg. onion
1 c. chopped green pepper
2 cloves garlic, chopped
1 c. cooked dice chicken
1 c. diced ham
1 c. sliced smoked sausage
2 1/2 c. peeled, cubed tomatoes
2 1/2 c. chicken broth
1 c. uncooked rice
1 tbsp. chopped parsley
1/2 tsp. salt
1/2 tsp. Tabasco pepper sauce

Heat oil in saucepan. Saute onion, green pepper and garlic. In covered fryer add all ingredients. Bring to a boil then simmer with lid on 25-30 minutes or until texture is to your liking.
