ZUCCHINI JAM 
6 c. grated zucchini
6 c. sugar
1 c. crushed pineapple with juice
1/2 c. lemon juice
1 - 6 oz. box of Jello (I usually use Raspberry, but any flavor of your choice will work)

Cook zucchini for 12 to 15 minutes until clear; stirring constantly. Add sugar, pineapple, and lemon juice. Boil 6 minutes more. Take off of stove and add Jello. Pour into jelly jars and seal. You do not have to process.
