SWEET AND SOUR CABBAGE 
1 lg. head red cabbage, coarsely chopped
4 tbsp. bacon fat
1 med. onion, chopped
2 apples, unpeeled and grated
1/2 c. vinegar
1/3 c. brown sugar

Heat bacon fat in skillet and slowly cook onions until tender. Add cabbage; season and cover. Steam for 10 minutes. Add apples and 1/4 cup boiling water. Cover and simmer over low heat for 1 hour until cabbage is tender. Add vinegar, and sugar; cook 15 minutes longer. Sugar and vinegar amounts can be varied according to taste.
