SWEET POTATO CASSEROLE 
2 lbs. sweet potatoes
1/2 c. brown sugar, packed
2 tbsp. corn oil butter
Egg substitute equivalent to 1 egg
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1/8 tsp. salt
2/3 c. evaporated milk (skim)
No stick spray for dish
1 c. miniature marshmallows

Preheat oven to 350 degrees. Cook potatoes and mash until smooth. Add all ingredients except the marshmallows and cooking spray and beat well. Spray 1 1/2 quart casserole with cooking spray. Spoon mixture into casserole. Top with marshmallows and bake 25-30 minutes or until marshmallows are golden brown. This dish can be prepared a day ahead and baked just before serving. Serves 8.
