CHRISTMAS CAKE 
2 1/2 c. self-rising flour
1 c. buttermilk
1 1/2 c. vegetable oil
1 tsp. baking soda
1/4 c. (2 - 1 oz. bottles) red food coloring
1 1/2 c. granulated sugar
1 tsp. cocoa
1 tsp. vinegar
2 eggs

FROSTING:

1 (8 oz.) pkg. cream cheese, soft
1 stick butter
2 tsp. vanilla
2 1/2 c. powdered sugar
1 c. finely chopped pecans

Heat oven to 350 degrees. Mix all ingredients with electric mixer. Spray 3 9" round cake pans and flour completely. Pour batter equally into the three pans and bake for 20 minutes. Test for doneness with toothpick. Cool layers in pans for 10 minutes. Carefully remove layers from pans and cool completely. For frosting, blend all ingredients thoroughly and spread on cake.
