CRANAPPLE - WALNUT CAKE 
1 1/2 c. brown sugar or 3/4 c. honey plus 2 tbsp. orange juice
1/2 c. oil
2 c. flour
1 tsp. baking soda
1/2 tsp. nutmeg
1 tsp. cinnamon
1 tsp. salt
2 eggs
1 1/2 tsp. vanilla
2 c. apples, sliced
1/2 c. walnuts, chopped
1 c. whole raw cranberries

Cream together oil and sugar (or whip with honey and orange juice about 10 minutes, until opaque). Add eggs and vanilla. Beat well. Sift together dry ingredients and add to first mixture. Stir in apples, cranberries and nuts. Bake at 350 degrees for 40 to 50 minutes in a well greased 9 x 13 inch pan.
