SPINACH CURRIED SALAD 
2 lbs. fresh spinach leaves
1/2 c. raisins
3 red delicious apples, sliced and diced
2/3 c. dry roasted, unsalted peanuts
1/3 c. scallions, thinly sliced
2 tsp. toasted sesame seeds

Toss with dressing (see below).

DRESSING:

Mix together in a jar:

2/3 c. salad oil
1/2 c. red wine vinegar
1 tbsp. finely chopped chutney
1 tsp. curry powder
1 tsp. salt
1 tsp. dry mustard
1/4 tsp. Tabasco sauce

Shake together and let stand at room temperature for 2 hours.

Serves 12.
