PERFECT CUSTARD PIE 
4 eggs, slightly beaten
1/2 c. sugar
1/4 tsp. salt
1 tsp. vanilla extract
2 c. milk, scalded
1 unbaked 9-inch pastry shell
Ground nutmeg (optional)

Combine eggs, sugar, salt and flavorings; beat until blended. Gradually stir in scalded milk. Pour into pastry shell; sprinkle with nutmeg, if desired. Bake at 400 degrees for 15 minutes. Reduce temperature to 350 degrees and bake 15-20 additional minutes.
