PERFECT PIE CRUST | |
4 c. all purpose flour 1 tbsp. granulated sugar 2 tsp. salt 1 1/2 c. vegetable shortening firmly chilled, cut in small pieces 1/4 c. butter, firmly chilled and cut into small pieces 1 lg. egg 1/2 c. ice water 1 tbsp. cold vinegar In a mixing bowl, combine flour, sugar and salt. Place in freezer for 5 to 10 minutes until chilled. Add shortening and butter; work into flour with fingertips until moisture forms small, flaky granules, like oatmeal. In a measuring cup or a small bowl with a pouring lid, beat together egg, vinegar and ice water. Add to flour mixture and stir with a fork until dough holds loosely together. Dough should feel moist, but not sticky. If too dry, sprinkle with a few drops of water; if to sticky, add a teaspoon or two of flour. Bake according to pie directions. |
