PEPPERONI CASSEROLE 
1 pkg. pepperoni or 1 lb. sausage
1 lb.Velveeta cheese (shredded)
1 lb. Mozzarella cheese (shredded)
1 (6 oz.) can tomato sauce
1 lg. bag Nacho chips
1 c. cooked spaghetti
1/4 head lettuce (shredded)
2 med. tomatoes, cubed
1 med. bell pepper, chopped
1 med. onion, chopped
1/4 c. celery, chopped
1/2 c. sliced mushrooms (optional)
Salt to taste

Fry pepperoni (or sausage), add onions, mushrooms. Saute. Drain. Add tomato sauce, simmer. In a large casserole dish put spaghetti in bottom. Add the pepperoni, and sauce. Add Nacho chips, tomatoes, pepper, celery and lettuce. Top with cheese. Bake in 450 degree oven just until cheese melts. Serve hot.
