EASY CHICKEN CACCIATORE | |
2 1/2-3 lb. broiler fryer chicken, cut up 2 tbsp. olive oil 2 cans (14 1/2 oz. each) Del Monte Italian style stewed tomatoes 1 can (6 oz.) Del Monte tomato paste 1 c. sliced zucchini 1 tsp. basil, crushed Hot cooked pasta 2 c. sliced mushrooms Brown chicken in oil, 10 minutes, turning occasionally; drain. Add tomatoes, tomato paste, mushrooms, zucchini and basil. Salt and pepper to taste, if desired. Cover and simmer 25 minutes. Serve over pasta. Garnish with parsley, if desired. 4-6 servings. Preparation time: 5 minutes. Cooking time: 35 minutes. |
