EASY CHICKEN CACCIATORE 
2 1/2-3 lb. broiler/fryer chicken, cut up
2 tbsp. olive oil
2 cans (14 1/2 oz. each) Del Monte Italian style stewed tomatoes
1 can (6 oz.) Del Monte tomato paste
2 c. sliced mushrooms
1 c. sliced zucchini
1 tsp. basil, crushed
Hot cooked pasta

Brown chicken in oil, 10 minutes, turning occasionally. Drain. Add tomatoes, tomato paste, mushrooms, zucchini and basil. Salt and pepper to taste. Cover and simmer 25 minutes. Serve over pasta. Yield 4-6 servings.
