SCOTTISH SHORTBREAD 
1/2 c. sugar
2 1/2 c. flour
1/2 lb. butter
Frosting (optional)

Cream butter and sugar until light and creamy. Add flour 1 cup at a time. Mold into triangles or rectangles 3 inches wide. Prick all over but not through to bottom, with a fork or toothpick. Bake at 300 degrees for 45 minutes on a greased cookie sheet. Also, flour the cookie sheet for easier removal. Frost them with icing.
