RICH POTATO STUFFING 
6 med. potatoes
2 onions, chopped
6 stalks celery, chopped
1 c. common crackers or oyster crackers, crushed
1/4 tsp. pepper
1 tsp. Bell's Seasoning
Salt to taste, if desired
1 stick butter

Peel, boil, and mash potatoes. While they are cooking, saute celery and onions in butter over low heat, being careful not to brown, until onions and celery are clear and soft.

Combine sauteed vegetables and butter mixture, mashed potatoes, crushed crackers, and spices. Stuff turkey or chicken or bake in a casserole about 30 minutes. Amounts of onions, celery, spices, etc. can be varied to taste.
