ZUCCHINI CASSEROLE 
1 onion
4 cloves garlic
1 tomato
1/2 green pepper
2-3 med. zucchini
Oregano & basil
Cracked pepper
1 pkg. mushrooms
3 med. potatoes
2 med. carrots
8 oz. shredded mozzarella cheese
1 c. croutons

In large non-stick fry pan saute sliced onions, green pepper, mushrooms and garlic in butter. Slice and steam all vegetables. Add vegetables to onion mixture and saute. Season with oregano, basil and pepper. Spoon into large casserole dish and stir in cheese. Top with croutons and bake 30 minutes at 325 degrees.
