PRUNE CIRCLE COOKIES 
1 c. snipped prunes (or dates)
1/3 c. water
1/3 c. sugar
1 tsp. lemon juice

Cook 5 minutes or until water is absorbed. Stir constantly.

2/3 c. shortening (butter or Crisco)
1 1/4 c. brown sugar, packed

2 lg. eggs, beaten
1 tsp. vanilla

2 c. flour
1/2 tsp. salt
1/2 tsp. baking soda
1/2 tsp. baking powder

Drop by teaspoon on cookie sheet. Drop 1/2 teaspoon prune mixture in center of each cookie, then a small drop of cookie dough on top of prune mixture. Bake at 375 degrees for 10 minutes.
